French Breakfast Muffins

I made these this morning and WOW are they SOOOOO good!!! This is a recipe from the Pioneer Woman site .These are beyond delicious. Keep in mind that these are 100% unhealthy and are every bit worth it!



French Breakfast Puffs
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup sugar
2/3 cup shortening
2 eggs
1 cup milk
1 1/2 cups sugar
3 teaspoons cinnamon
2 sticks butter

Preheat oven to 350 degrees. Lightly grease 12 muffin cups. Stir together flour, baking powder, salt, and nutmeg. Set aside. In a different bowl, cream together 1 cup sugar and shortening, then add eggs and mix. Add flour mixture and milk alternately to creamed mixture, beating well after each addition. Fill prepared muffin cups 2/3 full. Bake at 350 for 20-25 minutes or until golden. In a bowl, melt 2 sticks butter. In a separate bowl combine remaining sugar and cinnamon. Dip baked muffins in butter, coating thoroughly, then coat with cinnamon-sugar mixture. Eat. Faint.

Nicole's Stogganoff

Okay, everyone is bugging me to get the coveted recipe . . . lol now all measurements aren't gonna be 100% accurate because I NEVER measure this recipe . . I just throw it in and taste it til its right! Anyways, enjoy . . .
Oh yeah, and if your on a diet . . . this is NOT the dinner for you!! lol

About 1 lb hamburger
about 1/2 cup minced onion (dried or fresh)
1/4 c margarine
pepper to taste
2 Tbsp flour
1 can Cream of Mushroom Soup
1 sm. carton sour cream
1 can mushrooms (drained) OPTIONAL - I never add mushrooms because I hate them. I just like the soup.

Brown beef and onion in butter. Add pepper, flour, soup and mushrooms (if added). Add sour cream before serving. Also if too thick add milk until its the consistency that you want. I always add a ton of salt and pepper.

Serve over Egg noodles or baked potatoes.

Sweet & Sour Meatballs

Also, from Janalie

1 pound hamburger
1 egg
1/2 to 1 chopped onion
1 cup dried bread crumbs
salt & pepper to taste
Sauce
1 cup water
1/2 cup cider vinegar
1/2 cup ketchup
2 tbs cornstarch
1 cup brown sugar
2 tbs soy sauce
Combine hamburger, egg, onion, bread crumbs, and salt & pepper. Mix together and form into meatballs. Bake in a muffin tin at 350 degrees for 20 minutes (turn meatballs over after 10 minutes).
Combine and mix in a large pot on the stove water, cider vinegar, ketchup, cornstarch, brown sugar & cornstarch. Put the meatballs in the sauce and let come to a boil and thicken. Serve over rice!
This recipe is quite fast and really yummy!

Spaghetti Sauce

This is my sister in law, Janalies recipe . . . never tried but heard its yummy!

1 pound hamburger
1 chopped onion
1 bay leaf
2 tsp salt
1/4 tsp pepper
1 tsp oregano
1 tbs worchestershire sauce
1 tbs brown sugar
1 tsp garlic salt
1 tsp chili powder
2 tsp basil
1/2 c. ketchup
2 cans tomato sauce
1 can diced tomatoes
1 can tomato soup
1 can cream of mushroom soup
2 shredded carrots
In a large pot brown the hamburger with the onion. Drain the oil, and add the rest of the ingredients, mix well and let simmer for 2 to 3 hours.
This recipe looks intimidating, but it actually goes very quickly. I make this at least once a month and then I freeze the leftovers. I get at least 3 meals out of one batch, and it taste just as good even if it has been frozen.

Lasanga

K- I just kindof throw things in, so this recipe might not be exact. Hope you all like it! :)

About 1 lb. hamburger
1 jar of Ragu spaghetti sauce (I like the six cheese kind for this recipe, but whatever you like will work)
about 1 c. chopped onion
1 large clove garlic, finely chopped
2 boxes of lasagna noodles
2 of the bigger containers of cottage cheese (I think it's like the 1lb. 8 oz size.....)
Mozzarella cheese
Cheddar cheese (We like a lot of cheese, so just use what your family likes.)

Pre-heat your oven at 350. Cook the hamburger with the onions and garlic. Once meat is cooked, add the Ragu. Spray a 9x13 pan with cooking spray. Put about 1/2 of the hambuger mixture in the bottom of the pan. Then, put the uncooked noodles over the hamburger, (I usually use 2 layers of noodles), cover the noodles with 1/2 the cottage cheese, 1/2 the mozzarella, and 1/2 the cheddar. Repeat all the steps. Cover with tin foil and cook for an hour. Enjoy!

Chicken Enchiladas

2 cans Cream of Chicken Soup
16 oz. Sour Cream
1 lb Chicken
1 dozen corn/flour tortillas
cheese
l can diced green chilies (optional- I like the flavor of them)

Combine soup and sour cream, and green chillies if added. Put some meat, a spoonful of soup mixture and cheese on a tortilla and roll up. Place each in a cake pan cover with remaining sauce and cheese. Bake at 400 degrees for 30 minutes.

Poppyseed Chicken

This is a family favorite courtesy of my Mother-in-law! It's so yummy. One of our Sunday bests!

1 1/2 cube real butter, melted
2 cans Cream of Chicken
1 small tub sour cream
2 Tbsp poppyseed
2 pkg Ritz Crackers
4-5 Chicken Breast

Crush 2 pkg Ritz crackers and mix with melted butter. (I think I use a little less butter) Mix soup, sour cream and poppy seeds in separate bowl.

Place chicken in a 9x13 pan, pour soup mix over the top and then top with the crumb mix. Cover with foil and bake 350 degrees for 1 1/2 hours or 325 degrees for 3 hours.

The best Pumpkin Cake EVER!

This is the most incredible cake ever. SOOOOOOOOO GOOD! I am so excited to make it next week when my friends and I get together! Oh yeah, and for those of you who don't like pumpkin . . . this tastes NOTHING like pumpkin. Its more of a spice cake . . . . with pumpkin in it. SO GOOD! (Cory fought with me forever about what kind it was because he HATES pumpkin . . . hehe he was fooled into trying it and now its his favorite!)

4 eggs
1 2/3 C Sugar
1 can pumpkin (small 15 oz)
1 C. Vegetable Oil
2 C. flour
1 tsp baking powder
2 tsp Cinnamon
1 tsp Salt
1 tsp baking soda
1/8 tsp nutmeg

Pour into a COOKIE sheet (not a cake pan) Bake at 350 degrees for 20 min.

Icing

1 pkg cream cheese
1 cube butter
2 tsp vanilla
3-4 C. Powder Sugar

Spread over the top when cooled.

Enchilada Casserole

1 can Cream of Chicken Soup
1 can Enchilada Sauce (mild- I use Rosita)
1 1/2 lb hamburger
6-8 tortillas
cheese- grated

Brown hamburger (I also add some minced onion cuz I like it with enchiladas) . Break up tortillas into chunks or strips (about 1-2") Add to hamburger. Add 2 can items and bring to a boil, then add cheese and melt.

Mix into a casserole dish and bake at 350 degrees til cheese melts. Then top with sour cream, salsa or whatever you prefer.

Taco Soup

This soup is SUPER GOOD. It makes A LOT so it is great to put in bags and freeze for later. With one batch, it made 3 meals for my family. Its super tasty and very easy.

2 small cans light kidney beans
2 small cans dark kidney beans
1 can black beans
2 cans diced tomatoes (I buy the basil & garlic flavor)
1 can corn
1 lb hamburger with 1 packet mild taco seasoning and a little water
40 oz. tomato juice (add as needed . . . I never use the whole thing)
white or brown rice (optional- make enough to feed your families needs)
Frito Lays or French Bread ( I prefer fritos)

Cook hamburger. While it is cooking add all other ingredients to a large pot. Mix the taco seasoning and water to hamburger and put in pot . . .heat thoroughly. While heating through cook instant rice in separate pan (I don't make very much maybe 1 cup for 2 people because I only put a little on the bottom).
TO SERVE: Place rice in the bottom of bowl, add soup, grated cheese, Frito lays and sour cream.
This is SO GOOD with all of those things on top! Its also yummy with French bread.

Stove Top Casserole

This is really good and very easy. I usually opt to this when I can't think of anything and don't want to spend a lot of time cooking.

1 pkg Stove top (chicken)
1 big can of Chicken (its by the tuna fish, or you can use regular chicken too)
1 can Cream of Chicken soup
1/2 c. milk (mix with soup)
Cheese to cover top

Cook Stove top as directed. Place on the bottom of casserole dish (I use my round one or a 8x8 glass pan) add chicken on top, then soup and milk mixture. Add cheese on top. Cover with foil and bake 30 minutes at 350 degrees.

Sausage Dip

This is so yummy for potluck parties and super bowl parties!

1 lb sausage (Jimmy Dean Regular)
1 lg green pepper, diced
1 8 0z cream cheese
1 can green chiles, diced
1 lg onion
3 lg tomatoes, diced
1 pint sour cream

Brown sausage then add onion and green pepper. Cook until tender. Drain fat. Place all ingredients into a crockpot and heat on low. Serve with Ritz Crackers.

Cream Cheese Chicken on Rice

I absolutely LOVE this recipe. I can't remember where I got it . . . but its mighty tasty!

4-6 pieces of chicken (boneless, skinless)
1/2 c water (unless chicken is frozen)
1 pkg dried onion soup
1 pkg (8 oz) cream cheese, cubed
1 can cream of mushroom soup

Put all ingredients in the crockpot for 6-8 hours. Last 1/2 hour separate chicken and sauce. Shred the chicken and then mix back into sauce. Then serve over white rice.

Aunt Shellies Yummy Guacamole Dip!

I absolutely LOVE this recipe. I make this EVERY TIME I have anything Mexican.

2-3 Large Avacados - mashed
2 Tbsp medium Salsa
1 Tbsp Sour Cream (I usually put a little more cuz I love it)
1 Tbsp Jalapeno juice
salt to taste.

Just mix it together and then eat with tortilla chips or put it on your tacos. SO GOOD!

Pizza Rolls

I found this surfing blogs . . and tried it tonight and they were pretty good.


Pizza Dough

1 1/2 cup water
1 1/2 Tbsp sugar
1 1/2 Tbsp yeast
1 1/2 tsp salt
3-4 cups flour

Mix and knead above ingredients. Roll out on floured surface.

Pizza Rolls

Pizza dough
5 oz cream cheese
1 lb shredded mozarella cheese
Pizza toppings (we like canadian bacon, green pepper, and onions)

Spread cream cheese on rolled out dough. Add your choice of pizza toppings, then cover with cheese. Roll up like a cinnamon roll and cut each about 1 inch (if you do it thicker they are doughy). Place on greased cookie sheet. Bake 425 for 15 minutes. Dip in Pizza Sauce, parmesan cheese, or ranch.

Easy Chicken Cordon Bleu

I just tried this and it was good. Cory liked it a lot. Pretty simple to make too!

1 pkg. (6 oz.) STOVE TOP Lower Sodium Stuffing Mix for Chicken
6 small boneless skinless chicken breast halves (1-1/2 lb.)
6 slices OSCAR MAYER Thin Sliced Smoked Ham
1 can (10-3/4 oz.) reduced-sodium condensed cream of chicken soup
1 Tbsp. GREY POUPON Dijon Mustard
6 KRAFT DELI DELUXE Swiss Cheese Slices

PREHEAT oven to 400°F. Prepare stuffing mix as directed on package; set aside.

PLACE chicken in 13x9-inch baking dish; cover with ham. Mix soup and mustard; spoon over chicken. Top with prepared stuffing.

BAKE 25 min. or until chicken is cooked through (165°F). Top with cheese. Bake an additional 5 min. or until cheese is melted.
