Easy Baked Red Potatoes.

This is a side that my family loves. We eat them alot with red meat.
Very easy and yummy.

*8-10 small red potatoes or 6-8 med red potatoes
*5 tsp butter melted
*1 Liptons onion soup envelope
*Mrs. Dash

Heat oven to 375* Prepare cookie sheet with tin foil, and spray with Pam. Cut red potatoes into half and quarter slices. Put into arge zip lock bag. Pour melted butter into ziplock of potatoes. Pour lipton onion soup into ziplock. Close zip lock. And shake until potatoes are well covered. Pour potatoes onto pan. Sprinkle Mrs. Dash on potatoes..apply un melted butter slices to potatoes if desired.
Put in the oven...Scrape bottom of pan about every 15-20 minutes...add butter if needed. Cook for about 1 hours or until potatoes are tender.

Pumpkin Bars

My family can down a pan of these in one day.

Pumpkin Sheet Cake:
1-15 oz. Pumpkin Puree
2 cups Sugar
1 cup Oil
4 Eggs
2 cups flour
2 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 tsp Cinnamon

-Beat together pumpkin, sugar, and oil
-Add Eggs, mix well
-In another bowl mix flour, soda, salt, and cinnamon
-Slowly add dry ingredients to pumpkin mixture, beat until well blended.
-Pour into greased cookie sheet pan.
Cook at 350* for 20 min.

Cool Cake.

Cream Cheese Frosting: (I usually x this by 1 and a half) I am a frosting person.

-3 oz. Softened Cream Cheese
-5 tbls. Butter softened
-1 tsp. Vanilla
-1 & 3/4 cups Powdered Sugar (Sift for best result)
-3 tsp. Milk

Mix ingredients until creamy...spread on cooled cake. Enjoy!

Ho Ho Cake

This is a cake that is alot like Little Debbies Ho Hos.

Items Needed:
1 chocolate cake mix (Oil, Water, and Egg)
2 chocolate frostings
3/4 cup sugar
2/3 cup crisco
1 cube butter or margerine
2/3 cup evaporated milk
2 tsp. Vanilla


1 chocolate cake mix (I usually use devils food)-Prepare as directed on the box, but prepare it on a greased cookie sheet. The bake time is usually around 20-25 minutes.

Allow cake to cool.

Prepare the white Center:
3/4 cup Sugar
2/3 cup crisco
1 cube butter or margerine
2/3 cup evaporated milk
2 tsp Vanilla Extract
* Whip for 10-15 minutes

Apply whipped topping evenly to cooled cake.

In microwave melt chocolate frosting....some people use 1 frosting but I love frosting so I use 2. It doesnt take long to melt frosting..so check it after 15-20 seconds and stir it. Once melted pour onto Whipped topping and spread evenly to cover cake.

Chill cake...get it out about 20 minutes before serving it.

Amazing Oatmeal chocolate chip cookies

This is my families favorite cookie recipe!

1 cup softened butter
1/2 cup butter flavored shortening
1 cup brown sugar
1 cup Sugar
2 Eggs
1 tsp. Salt
1 tsp. Baking Soda
1 tsp. Baking Powder
2 tsp. Vanilla
2 cups flour
2 cups oatmeal (quick oats)
1-2 tsp. Cinnamon (this depends on how much cinnamin you prefer)
Chocolate chips (I usually use milk chocolate but semi-sweet is fine too.)

Heat oven to 350*, combine Softened butter, shortening, sugars, and eggs until well blended. Add dry ingredients. I usually put these an an ungreased non stick cookie sheet. Bake time depends on your oven but on average I cook them for 12-14 minutes...take them out of the oven while they are still gooey. Enjoy!
